Zucchini Casserole 2
Your favorite herbs – marjoram, oregano, thyme, etc.
Saute zucchini and onion in 1 T. olive oil over medium heat until zucchini is almost tender. Add crumbled bacon, tomatoes, salt, pepper and herbs. Cook until heated through. Stir in cheese and croutons. Spray casserole with Pam, turn all ingredients into casserole. Bake at 350 for 30 minutes or until bubbly.
