- Country Garden Salad

- 1/4 cup mayonnaise
- 2 tbsp chili sauce
- 2 tbsp gr peppers, chopped
- 2 tbsp onion, finely chopped
- 1 tsp lemon juice
- 6 cups salad greens
- 1/2 cup carrot sticks, 2 in long
- 1/2 cup cherry tomatoes
- 2 - 5 oz chicken
- Directions
- For dressing: In a bowl, combine mayonnaise, chili sauce, green pepper, onion and lemon juice. Chill. In large bowl, combine remaining ingredients. Serve with dressing.

Beets with Onion and Cumin
Heat a medium saucepan over medium-high heat. Pour in oil and saute onions and garlic until translucent. Mix in cumin seed and saute an additional 2 minutes. Sprinkle in flour and saute 1 minute more. Stir in beets, tomatoes, water and salt. Reduce heat to low, cover pan with lid and allow to simmer 30-45 minutes, until beets are tender.
