- 2 Pound Bag Hashbrowns
- 1 Can Cream of Chicken (or mushroom, celery, etc) Soup
- 1 Cup Chopped Onion
- 1 16-oz Container Sour Cream
- 2+ Cups Grated Cheddar Cheese
- Directions
- Thaw hash browns for 30 minutes. Mix can of soup and sour cream together. Add melted butter to the soup and sour cream. Put potatoes, cheese, onions in a large bowl. Pour soup mixture over potato mixture and mix together. Spread evenly in a 9 by 13 pan. Scatter crushed potato chips on top (I like alot but put as much as you like-around 1/2 in thick). Bake at 300 for 1 1/2 hours or until bubbly and brown.

Dandelion and Zucchini Saute
Cut ends of dandelion and cut greens into thirds. Bring a medium pot of salted water to boil. Add dandelion greens and cook for 3 minutes. Drain into a colander. While blanching greens, heat oil in a large skillet and add onions and garlic. When onions begin to brown add zucchini and mushrooms. Cook until golden brown, add seasoning and drained dandelion greens. Toss to mix and heat through. Serve immediately.
