- Goat Cheese Lettuce Wraps

- 1 Lg Head Lettuce washed and dry
- 4 oz Barn Goddess Chipotle Marinated Goat Cheese or Goat Feta or Goat Ricotta
- 1 cup Asparagus spears cut in 3 inch lengths
- 1 bunch Green onions cut in 3 inch lengths
- 1 Egg beaten
- 1/4 cup Sliced almonds
- Salt to ta
- Directions
- Drain oil from cheese into a wok or fry pan and heat until sizzling. Add the nuts and veggies and stir fry until a little tender (2 minutes or so) and almonds turn toasty golden. Add the egg and cheese and continue to stir fry until the egg is cooked. Remove from heat and scoop spoonfuls onto the lettuce leaves. Serve with your favorite hot sauce if you like it spicier.

Arizona Rancher's Prime Rib
Rub prime rib liberally with olive oil. Rub on Criollo Beef Spice Rub (source for it under "rubs" in the product list).
Preheat oven to 475 degrees. When prime rib is at room temperature place on a roasting rack in a roasting pan that has 2 cups of chicken broth in bottom of pan. Chicken broth should not touch the beef. Place in preheated oven for 20 minutes. Reduce oven temperature to 300 degrees and cook for approximately 15 minutes per lb of prime rib, using a meat thermometer to assist in judging internal meat temperature. Remove from oven and allow the meat to rest for 10 to 15 minutes under an aluminum foil tent. Carve and enjoy!
