- Pumpkin Cake Cookies

- 15 ounces canned pumpkin
- 1 egg
- 1 box yellow cake mix
- 2 tbps vegetable oil
- 1/2 cup rolled oats
- 1 tsp dried orange peel
- 1 cup chopped walnuts
- 2 1/2 tsp pumpkin pie spice
- 1/2 cup dried cranberries (optional)
- vanilla icing (optional)
- Directions
- In a large bowl, combine wet ingredients. Add in dry ingredients and mix well. Drop by tablespoons onto lightly greased cookie sheet. Bake at 350 degrees for about 10 minutes. Ice with vanilla icing if desired.

Molded Citrus Salad
Soften the gelatin in 1/2 cup water and let sit for 15 minutes. Peel and slice oranges into small chunks. Reserve any juice. Squeeze the juice from the other orange. Pour the gelatin mixture into a double boiler (boil water in bottom section) and stir over medium heat until crystals dissolve. Add the orange juice, lemon juice, and vinegar. Pour the liquid into a bowl and let cool. Refrigerate until the liquid has begun to jell, about 30 minutes. Stir in the rest of the ingredients and pour into a 3-cup mold. Chill again until firm.
