Spanish Rice with Bacon
  • 4 slices Bacon
  • 1/4 cup green pepper, chopped
  • 1 cup onion, chopped
  • 2 1/2 cups tomatoes, diced
  • 1 cup rice
  • 1/2 cup water
  • 1/2 tsp salt
  • dash pepper
  • 2 tsp sugar
Directions
Cook bacon, green pepper and onion until light brown. Add remaining ingredients and stir well. Bring to a boil; reduce heat. Cook covered 25-30 minutes or until rice is tender.
