Frittata with Bacon & Potatoes
Heat broiler. Cook bacon in large oven proof skillet over medium heat on stove until crisp. Pour off excess fat, leaving about 1 tablespoon fat in skillet. Add onions and saute for 1 minute. Add potatoes and continue to saute until lightly browned and done. Beat eggs and season with salt and pepper. Pour egg mixture over onion/potato mixture and stir gently to combine. Reduce heat to low and cover skillet and cook until eggs are nearly setï¿½about 5 minutes. Remove cover and place skillet under broiler to brown eggs lightly. Cut into wedges and serve immediately.
