- Corn and Green Bean Casserole

- 1 Can French-style Green Beans, drained
- 1 Can Kernal Corn, Drained
- 1/2 Container Sour Cream
- 1 Can Cream of mushroom (chicken or celery) Soup
- 1/4 Cup Finely Chopped Onion
- 1/2 Cup (or More) Grated Cheddar Cheese
- 1 Stack Ritch Crackers +4 or 5, crushed
- 1 Cube Butter, Melted
- Directions
- After draining vegetables, mix with other other ingredients except butter and crackers. Put into greased casserole, 9x13. Mix butter and cracker crumbs and spread on top of the casserole. Bake at 350 for 30 to 45 minutes.

Potato Cheese Soup
Cook potatoes in water and salt until tender. Reserve cooking water. Saute onion in oil until soft. Place some of the potatoes, potato water, onion and parsley in blender and puree (with blender no more than half full) until all potatoes are smooth. If you don't want to use a blender, feel free to mash the potatoes with an old-fashion potato masher.
Return potato mixture to the pot. Add milk, stirring continuously, add cheese, margarine and seasonings. Heat until cheese is melted and soup is hot. Do not boil.
